CHICKEN AND FRUIT SALAD WITH ORANGE VINAIGRETTE

Makes: 4 servings.
 

CHICKEN AND FRUIT SALAD WITH ORANGE VINAIGRETTE

Ingredients

2 tablespoons flour

1 3/4 teaspoons Lawry's® 25% Less Sodium Seasoned Salt, divided

3/4 teaspoon Lawry's® Seasoned Pepper, divided

4 small boneless skinless chicken breast halves

6 tablespoons canola oil, divided

1/4 cup orange juice

2 tablespoons white wine vinegar

8 cups salad greens

1 can (8 1/4 ounces) mandarin oranges, drained

1 cup sliced strawberries

1 cup blueberries

Directions

1. Mix flour, 1 1/2 teaspoons of the seasoned salt and 1/2 teaspoon of the seasoned pepper in shallow dish. Coat chicken evenly in flour mixture.

 

2. Heat 2 tablespoons of the oil in large nonstick skillet on medium heat. Add chicken; cook 5 to 6 minutes per side or until golden brown and cooked through.

 

3. Mix remaining 4 tablespoons oil, orange juice, vinegar and remaining 1/4 teaspoon each seasoned salt and seasoned pepper in small bowl until well blended. Toss salad greens and fruit in large bowl. Drizzle with vinaigrette; toss to coat well. Top with chicken. Serve immediately.
