Ingredients
1 1/2 pounds boneless skinless chicken breast halves
1 1/4 cups penne pasta, uncooked
1/4 cup sliced pitted black olives
1 cup water
1 package Lawry's® Mediterranean Sundried Tomato & Garlic Chicken Spices & Seasonings
1 can (14 1/2 ounces) petite diced tomatoes, undrained
1/2 cup crumbled feta cheese
Directions
1. Preheat oven to 375ºF. Place chicken, pasta and olives in 13x9x2-inch baking dish.2. Mix water, Seasoning Mix and tomatoes until well blended. Pour over chicken and pasta. Stir to coat well. Cover with foil.3. Bake 45 minutes or until chicken is cooked through. Remove foil and stir. Sprinkle with cheese. Let stand 5 minutes. Cut chicken into serving-size pieces. Stir pasta before serving.Chicken Cacciatore Casserole: Prepare as directed, using 1 cup each sliced mushrooms and bell pepper strips in place of the olives. Use 1/4 cup grated Parmesan cheese in place of the feta cheese.
