CHICKEN CACCIATORE CASSEROLE

CHICKEN CACCIATORE CASSEROLE

Ingredients

1 1/2 pounds boneless skinless chicken breast halves

1 1/4 cups penne pasta, uncooked

1 cup thinly sliced bell peppers

1 cup sliced mushrooms

1 cup water

1 package Lawry's® Mediterranean Sundried Tomato and Garlic Chicken

1 can (14 1/2 ounces) petite diced tomatoes, undrained

1/4 cup grated Parmesan cheese

Directions

1. Preheat oven to 375ºF. Place chicken, pasta, bell peppers and mushrooms in 13x9x2-inch baking dish.

2. Mix water, Seasoning Mix and tomatoes until well blended. Pour over chicken and pasta. Stir to coat well. Cover with foil.

3. Bake 45 minutes or until chicken is cooked through. Remove foil and stir. Sprinkle with Parmesan cheese. Let stand 5 minutes. Cut chicken into serving-size pieces. Stir pasta before serving.
