Grilled Aloha Pork

Cook Time: 30 minutes
Makes: 4 servings.
 

Ingredients:
 

1 pork tenderloin (about 1 pound)

3/4 cup Lawry's® Sesame Ginger Marinade With Mandarin Orange Juice or 3/4 cup Lawry's® Teriyaki Marinade with Pineapple Juice, divided

4 fresh pineapple slices or 1 can (8 ounces) pineapple slices in juice, drained

1 medium green or red bell pepper, cut into strips

1 small red onion, sliced

 
Directions:
 
1. Place pork in large resealable plastic bag or glass dish. Add 1/2 cup of the marinade; turn to coat well. Refrigerate 30 minutes or longer for extra flavor. Remove pork from marinade. Discard any remaining marinade.

2. Grill pork over medium heat 25 to 30 minutes or until desired doneness, turning occasionally. Brush with 2 tablespoons of the remaining marinade during last few minutes of cooking.

3. Meanwhile, toss pineapple slices, bell pepper and onion with remaining 2 tablespoons marinade. Place in center of large sheet of heavy duty aluminum foil. Bring up sides of foil; double fold top and ends to tightly seal packet. Place on grill with pork. Grill 10 minutes, turning packet over halfway through cook time. Slice pork and serve with pineapple mixture.


To Roast Pork: Prepare pork and pineapple mixture as directed. Place pork in foil-lined 13x9-inch baking pan. Place pineapple mixture around pork. Roast in preheated 400°F oven 30 minutes or until pork is desired doneness. Brush pork with remaining 2 tablespoons marinade during last few minutes of cooking.
